From 29 to 31 August, The St. Regis Singapore hosted Marriott International’s Luxury Dining Series 2025, a regional culinary event that brought together a selection of the group’s luxury properties across Asia-Pacific. Each hotel presented curated dining experiences led by renowned chefs and mixologists, showcasing traditional flavours and innovative techniques.
The series unfolded across four distinctive venues—Yan Ting, The Astor Grill, The Tea Room, and the St. Regis Bar Singapore—blending heritage flavours with contemporary interpretations.
Guests at Yan Ting savoured an exquisite four-hands menu that bridged heritage and innovation in Cantonese cuisine.
At The Astor Grill, culinary mastery came alive as three chefs combined creativity and technique for a memorable six-hands dining experience.
Staying true to the “Forgotten Flavors” theme, Yan Ting featured an authentic four-hands Cantonese menu by Executive Chinese Chef Chan Chung Shing and Michelin-starred Chef Daniel Wong of Jin Xuan Chinese Restaurant at The Ritz-Carlton Shanghai, Pudong. Together, they reintroduced indigenous ingredients in inventive ways, bridging tradition and innovation.
At The Astor Grill, guests savoured an exceptional six-hands menu crafted by Chef Vladimir Veiga, Head Chef of one-Michelin-starred LAB by Sergi Arola at The Ritz-Carlton, Penha Longa Resort; Chef Fabio Granata, Executive Chef of The St. Regis Singapore; and Chef Angelo Sergio, Chef de Cuisine of The Astor Grill. The collaborative menu redefined fine dining through imaginative techniques and bold pairings.

Meanwhile, The Tea Room and the St. Regis Bar Singapore offered more intimate experiences. Award-winning Pastry Chef Angela Lai joined Executive Pastry Chef Ng Chee Leong to reimagine Singapore’s beloved sweet and savoury flavours through a refined, modern lens. The St. Regis Bar also came alive with a showcase of regional cocktail talent, with guest bartenders Mr Paulo Naranjo and Mr Marco Dognini joining the resident bar team to craft cocktails inspired by regional spirits and time-honoured techniques.
The series celebrated the artistry and vision of the chefs, transforming each meal into a journey of flavours and stories. From bold reinterpretations of local classics to exquisite fine-dining creations, guests experienced the passion, creativity, and dedication that made every dish truly memorable.
