Last month, Grand Copthorne Waterfront Hotel celebrated Singapore’s 53th birthday with a month-long Heritage Food Festival at the hotel’s buffet restaurant, Food Capital, and took guests on a walk down memory lane of the country’s melting pot of nostalgic flavours. Singapore’s National Day was held on 9 August.

It was a gastronomic spread of Asian favourites such as Laksa, Satay, Tandoori Chicken, Ngoh Hiang (five-spice meat roll) as well as an international cuisine spread to cater to all guests. The buffet also came complete with durians (or known as the “King of Fruits”), where guests enjoyed it with a scenic view of the Singapore River from the hotel’s promenade.

Here are just some of the mouth-watering favourites from the delicious spread.

Chicken and mutton satay served with rich peanut sauce, is an all-time favourite of Singaporeans.

A delicious spread of Nasi Lemak side dishes complete with Otah, Fried Chicken Wings, Eggs, Chicken Cutlet and Spam.

Fried “mantou” (or Chinese buns) with the Singapore’s famous Chilli Crabs.

The “Golden Pillow” or Food Capital’s version of chicken curry in a bun.

A resplendent spread of desserts like these 9-layer rainbow Nyonya Kueh (Peranakan cakes) satisfied the sweet tooth of many.
