M Social Hotel New York Downtown (formerly Millennium Downtown New York) has announced the appointments of Mr George Seremetis as director of food & beverage and Chef Austin Ishibashi as executive chef. They will oversee the property’s culinary and beverage operations.

Their appointments come as the hotel prepares for the debut of its restaurant, Beast & Butterflies, which will form part of the property’s rebrand from Millennium Downtown New York to M Social Hotel New York Downtown.

Mr Seremetis brings more than a decade of experience in hospitality, beginning his career as a beverage manager with the Jose Andres Group in Las Vegas. He went on to hold positions in restaurants across the Bahamas and New York before serving as director of food & beverage at M Social Times Square.

Chef Ishibashi has a refined culinary background shaped by his experience in acclaimed restaurants including Uchi Dallas, Benoit New York, and Michelin-starred Claro in Brooklyn.
