M Hotel has reopened its long-established restaurant The Buffet! Keeping to its roots of Chinese-style steamboats while elevating the dining experience to embrace Singapore’s diverse cultures, The Buffet has been reintroduced as the first Halal steamboat buffet in Singapore’s city centre. It boasts an extensive menu of fresh seafood, premium meat choices and even a ‘live’ prawn station, along with a special series of house-dipping sauces made by Chef Boz Yacob and Chef John Chau.

The two talented chefs – Chef Boz who specialises in Malay cuisine and Chef John who has an extensive background of Chinese delicacies – created the rich steamboat broths that harmonise Chinese and Malay flavours.

For the steamboat, choose from a wide spread of fresh seafood choices such as Snapper Fillet, Pink Scallop and Pacific White Clam, while premium meat choices include Australian Premium Black Angus Beef and New Zealand Grass-fed Lamb. Must-tries on the menu also include the homemade pastes, including Chicken Water Chestnut Paste and Muar Otah Paste.

The spotlight is also on the house dipping sauces, especially Chef Boz’s Shabu Shabu, a must-try for chilli lovers. Other sauces include Thai-style Suki Sauce, Gourmet Belacan Sauce and the Signature Peanut and Sesame Sauce.

Alongside the steamboat is the ‘live’ prawn station, where prawns are cooked a la minute in a rich herbal essence – as fresh as it can get! Other sides to go along with the hotpot include heritage appetisers such as Prawn & Bitternut Crackers and Sengkuang Calit, or Asian mains including Signature Chilli Crab Cake and Roti Jala with Chicken Curry. For dessert, indulge in a remake of the good ol’ Durian Pengat from The Buffet, now reimagined in a cookie-crumbled cream puff, together with other sweet treats like Chocolate Éclairs and French pastries.

The Buffet has reopened on Level 2 of M Hotel. The steamboat buffet is Halal as verified by MUIS (Islamic Religious Council of Singapore), and is available during dinner from 6.00pm to 10.00pm from Fridays to Sundays, at $65++ per adult and $33++ per child.
