Reinvent Tradition
With Akira Back’s
New Menu

Introducing a unique brand of his signature flavours, Akira Back reinvents the traditional Japanese playbook of dining with a new menu where an elegant melding of cultures inspires the evolution of culinary tradition. The all-new Signature Flavours menu pays homage to Chef Akira Back’s bold legacy, promising a unique and experiential culinary adventure for all diners to enjoy.

As part of the Signature Flavours menu, diners will be able to enjoy a myriad of dishes that embody Chef Akira Back’s unexpected and exploratory style. Hirame Carpaccio (S$27) presents a reinvented take on the iconic Japanese dish of sashimi, transforming the traditional presentation of fresh fish against a palette of creative sauces and flavours from sweet nanbanzu vinegar, shallots, and jalapeno peppers. True to his adventurous nature, the A4 “Tochigi” Striploin (S$68) is a dish of well-marbled, premium A4 wagyu beef with a hint of sweet applewood smokiness, served with black garlic bordelaise.

A crowd-pleaser made up of amaebi (sweet shrimp), uni and tosa jelly served on a lightly toasted brioche.

Place an order for AB Tacos (S$25), a bold takj on the American food truck classic with a twist through the juxtaposition of crispy tacos served with tender wagyu galbi, topped with tomato ponzu sauce. Another crowd-favourite, the Tuna Pizza (S$26) offers thinly-sliced tuna layered with earthy truffle oil and umami aioli, on a hand-made tortilla base that offers a satisfying contrasting crunch.
