Of Umami
And Kokumi
A six-hand collaboration celebrating Exotica Umami (Ex M), an innovative seasoning sauce known for enhancing flavour, texture and complexity, takes centre stage at New World Millennium Hong Kong Hotel’s Sagano from now until 31 August 2026.
Inspired by traditional Kyoto cuisine, Sagano Head Chef Chris Chan joins forces with restauranteur and Ex M sauce creator Dan Gan, and JW Marriot Hong Kong Executive Chef Tony Wong to offer this distinctive dining experience. Together, they present a refined 10-dish menu that explores the depth and complexity of umami and kokumi, often described as the “fifth and sixth tastes” beyond sweet, salty, bitter and sour.
At the heart of the menu is Ex M sauce, inspired by garum, a Roman marinade with a history dating back more than 2,000 years. Known for complementing a wide range of cuisines, the sauce adds richness, intensity and a lingering finish to each carefully crafted dish.
Highlights include Ex M sauce-marinated sushi, grilled Hokkaido king crab leg with Ex M butter, Ex M yakitori and deep-fried Ex M marinated pork chop. Diners can also look forward to Kyoto-style pan-seared duck breast, grilled silver cod, sautéed A5 wagyu beef and grilled sea bream clay pot rice, before concluding on a refreshing note with green tea ice cream served with Ex M yuzu chocolate syrup.
The Ex M Imperial Tastes of Umami and Kokumi set dinner is available at Sagano until 31 August, priced at HKD1,200 per person and subject to a 10% service charge. Reservations are recommended and can be made by calling +852 2313 4222.
