Millennium Hotels and Resorts (MHR) is bringing the vibrant flavours and rich culinary heritage of Thailand to guests across Asia through immersive dining experiences in Singapore and Shanghai.

At Grand Copthorne Waterfront Hotel Singapore, the highly anticipated Thailand Flavourscape Buffet returns from 13 July to 23 August 2026 in partnership with the Royal Thai Embassy Singapore. Building on the success of last year's Phuket Flavourscape Buffet, this year's edition features an extraordinary six-hands collaboration celebrating Thailand's diverse culinary traditions.

Led by award-winning Executive Chef David Toh, the hotel's culinary team is joined by two acclaimed Thai guest chefs — Chef Ratchadawan Thongwichien (Chef Noon), Executive Chef of M Social Hotel Phuket, and Chef Nawamin "Boss" Pinpathomrat, MasterChef UK finalist and owner chef of REALM restaurants in Thailand. Together, they present a specially curated buffet inspired by Thailand's street food culture, royal-influenced classics and treasured regional recipes.

Guests can indulge in signature dishes including Tom Yum fried rice with grilled river prawn, Phuket-style braised pork belly, deep-fried seabass with pineapple chilli sauce, Andaman seafood curry and premium Grand Tom Yum Goong. The launch evening on 13 July will also feature cultural performances and an exclusive lucky draw, offering guests an immersive celebration of Thailand's rich heritage.

Grand Millennium Shanghai Hongqiao brings the authentic taste of Thailand with a selection of signature dishes celebrating the country's culinary heritage.

Meanwhile, Grand Millennium Shanghai Hongqiao officially launched its "Taste of Thailand" Food Festival in May in partnership with the Royal Thai Consulate-General in Shanghai and the Tourism Authority of Thailand. Held at O'Café, the festival celebrates authentic Thai cuisine while strengthening cultural connections between Thailand and China.

Guests at the opening ceremony enjoyed a live cooking demonstration by visiting Thai Chef Anna, alongside a specially curated buffet featuring favourites such as Tom Yum Goong, Pad Thai, Thai Curry Crab, Bangkok Volcano Pork Ribs and Mango Sticky Rice.

Running every Friday and Saturday until 29 August 2026, the festival offers guests in Shanghai an authentic taste of Thailand through a curated selection of traditional Thai dishes.

Through these culinary showcases, MHR continues to connect guests with authentic flavours and cultural traditions, creating memorable experiences that celebrate the universal language of food.
