The Bostonian in Boston is home to nearly 80,000 bees with two hives installed on the hotel’s rooftop in 2016.
Each hive hosts a single Queen and to keep with Boston history the team has selected Queen names derived from famous Massachusetts residents such as: Susan ‘Bee’ Anthony and A-Bee-gail Adams.
Last month, both hives were harvested for remaining winter stockpile and the hotel’s first bounty from the honey made, was successfully bottled. As a result, Chef Julia Brant has incorporated honey to the dishes on the menu at The Bostonian’s North 26 Restaurant and Bar’s “Catch of the Day” program, and will feature dishes such as a Tuna with Honey Tangerine Sauce.
Staff and guests alike are ‘buzzing’ over this green initiative.
