From 10 January to 15 February, celebrate the Lunar New Year in style and decadence at Madame Fan at JW Marriott Singapore South Beach.

Headlined by an exquisite Blossom Shunde-style Yu Sheng, the delicacy is introduced by New Gen Head Chef Pak Chee Yit and is designed to indulge sashimi lovers. With a lower ratio of salad to raw fish serving, Yu Sheng depicts maximal indulgence in every slice of premium Halibut Sashimi. Alternatively, the Duo Prosperity Salmon and Bluefin Tuna Yu Sheng is also available for diners who prefer a more vibrant mix of greens. All Yu Shengs are served with a brightly flavoured plum dressing, calibrated with honey and lemon juice for balance.

Diners can look forward to Lunar New Year Set Menus with fresh Cantonese flair – with house signatures such as Bridges Lobster & Hokkaido Scallop Soup with 20-year Gu Yue Long Shan Rice Wine Soup and Pan-fried Marble Goby Fish Fillet with Shaved Black Truffle.

Prices begin from S$98++ per person for lunch and S$148++ per person for dinner (minimum of two persons). For larger groups, Madame Fan offers six exquisite private dining rooms and a VIP dining room.

For a resplendent take-home experience, enjoy the Trio of Happiness Poon Choy which makes its debut this year. The savoury delight is a gastronomical centrepiece perfect for reunion tables, with a progressive spin by Chef Yit. It features three distinctive flavours – Classic Abalone Sauce for the traditionalist, Spicy Szechuan Sauce for the adventurous and an East meets West Truffle Sauce for the modern maestro. Each Poon Choy boasts an amalgamation of luxuriant ingredients including abalone, spiky sea cucumber, tiger prawns, Hokkaido scallop, fish maw, roasted duck and poached chicken. Family Sharing Set Menus for up to eight persons are also available.
