Senior chefs from Millennium Hotels and Resorts in the UK enjoyed a day at the rodeo in partnership with UK meat supplier Fairfax Meadow for the hotel group’s Chef Development Day. Chefs from Copthorne Birmingham, Copthorne Cardiff-Caerdydd, Copthorne Effingham Gatwick, Millennium Gloucester, Hard Days Night Hotel, Copthorne London Gatwick, Millennium Madjeski Reading, Copthorne Merry Hill-Dudley, Copthorne Newcastle and Copthorne Tara attended the session.

The chefs visited the Dunbia Abattoir in Cardington (a village in Bedfordshire), where they had an extensive tour of the facility. They learnt about all the key stages of the humane slaughter process and procedures for cows and had a first-hand viewing.

They then visited the Red Oak Cattle Farm in Brackley (a town in Northamptonshire), one of the farms that supplies directly to the Dunbia Abattoir. There, they toured the farm facility, learning about the farming process for cows, such as breeding and feeding, and learnt about the quality controls the farm has in place in the key stages of the breeding process.
